- 1 lb chicken breast, diced
- 8 oz mushrooms, sliced
- 1 onion, chopped
- 3 garlic cloves, minced
- 4 cups chicken broth
- 1 cup heavy cream (or coconut milk for dairy-free)
- 1 tsp thyme
- 1 tsp rosemary
- Salt and pepper to taste
Instructions
- Heat the olive oil in a heavy-bottomed pot over medium heat.
- Add the diced chicken to the pot and cook until no longer pink, approximately 5–6 minutes, then remove and set aside.
- In the same pot, add the sliced mushrooms, chopped onion, and minced garlic. Sauté until softened, about 4–5 minutes.
- Pour in the chicken broth and bring to a gentle simmer.
- Stir in the cooked chicken, cream, thyme, and rosemary. Simmer for about 10 minutes.
- Season with salt and pepper before serving.
