- 2 cups cooked risotto
- 1 cup grated Pecorino Romano cheese
- 1/2 cup grated Parmesan cheese
- 1 teaspoon freshly cracked black pepper
- 1/2 cup all-purpose flour
- 2 large eggs
- 1 cup breadcrumbs
- Cooking spray
Instructions
- In a large bowl, combine the cooked risotto, Pecorino Romano, Parmesan cheese, and black pepper.
- Form the mixture into small balls, about the size of a golf ball.
- Set up a breading station with flour, beaten eggs, and breadcrumbs.
- Dredge each arancini ball in flour, dip in egg, and coat with breadcrumbs.
- Preheat the air fryer to 375°F (190°C).
- Place the arancini in the air fryer basket in a single layer and spray lightly with cooking spray.
- Air fry for 10-12 minutes or until golden brown and crispy.
- Serve hot with additional cheese and black pepper on top.
Notes
- For extra flavor, add herbs like parsley or basil to the risotto mixture.
- Make sure the risotto is cold before forming the balls to help them hold their shape.
- These can be made ahead of time and frozen before air frying.
