Ingredients

  • 2 cups cooked risotto
  • 1 cup grated Pecorino Romano cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon freshly cracked black pepper
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1 cup breadcrumbs
  • Cooking spray

Instructions

  1. In a large bowl, combine the cooked risotto, Pecorino Romano, Parmesan cheese, and black pepper.
  2. Form the mixture into small balls, about the size of a golf ball.
  3. Set up a breading station with flour, beaten eggs, and breadcrumbs.
  4. Dredge each arancini ball in flour, dip in egg, and coat with breadcrumbs.
  5. Preheat the air fryer to 375°F (190°C).
  6. Place the arancini in the air fryer basket in a single layer and spray lightly with cooking spray.
  7. Air fry for 10-12 minutes or until golden brown and crispy.
  8. Serve hot with additional cheese and black pepper on top.
