Ingredients

  • 1 bunch of asparagus
  • 8 oz burrata cheese
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 1 lemon (juiced)
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Instructions

  1. Trim the tough ends off the asparagus and blanch in boiling water for 2-3 minutes until bright green and tender-crisp.
  2. Immediately transfer the asparagus to an ice bath to stop the cooking process.
  3. In a small bowl, whisk together olive oil, honey, lemon juice, salt, and pepper to create the vinaigrette.
  4. On a serving platter, arrange the blanched asparagus and tear the burrata into pieces over the top.
  5. Drizzle the lemon-honey vinaigrette over the salad.
  6. Garnish with fresh basil leaves before serving.
