Description
A refreshing salad featuring tender asparagus and creamy burrata, drizzled with a zesty lemon-honey vinaigrette.
Ingredients
Scale
- 1 bunch of asparagus
- 8 oz burrata cheese
- 2 tablespoons olive oil
- 1 tablespoon honey
- 1 lemon (juiced)
- Salt and pepper to taste
- Fresh basil leaves for garnish
Instructions
- Trim the tough ends off the asparagus and blanch in boiling water for 2-3 minutes until bright green and tender-crisp.
- Immediately transfer the asparagus to an ice bath to stop the cooking process.
- In a small bowl, whisk together olive oil, honey, lemon juice, salt, and pepper to create the vinaigrette.
- On a serving platter, arrange the blanched asparagus and tear the burrata into pieces over the top.
- Drizzle the lemon-honey vinaigrette over the salad.
- Garnish with fresh basil leaves before serving.
Notes
- For a more intense flavor, grill the asparagus instead of blanching.
- Feel free to add other ingredients like cherry tomatoes or nuts for extra texture.
- This salad is best served fresh but can be prepared a few hours in advance; just add the vinaigrette right before serving.
