Description

Ingredients

  • 1 ripe mango

  • Red onion (optional, diced)
  • Cherry tomatoes (optional, halved)

Instructions

  1. Begin by cutting the avocados and mango into bite-sized cubes and placing them in a large mixing bowl.
  2. Squeeze the juice of the lime over the diced avocado and mango.
  3. Sprinkle in salt to taste and gently toss the ingredients.
  4. Add the diced red onion, halved cherry tomatoes, and freshly chopped cilantro if using.
  5. Mix well once more and serve immediately or refrigerate for a chilled salad.

Notes

Chop mango and avocado a few hours in advance, but don’t mix lime juice until ready to serve.
