Description

A delicious and healthy BBQ Chicken Sweet Potato Bowl that combines tender chicken, sweet potatoes, and a tangy BBQ sauce for a satisfying meal.


Ingredients

  • 2 medium sweet potatoes, diced
  • 1 lb chicken breast, cooked and shredded
  • 1 cup BBQ sauce
  • 1 cup corn, canned or frozen
  • 1/2 cup black beans, rinsed and drained
  • 1 avocado, sliced
  • 1/4 cup green onions, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Place the diced sweet potatoes on a baking sheet, drizzle with olive oil, and season with salt and pepper.
  3. Bake the sweet potatoes for 25-30 minutes or until tender.
  4. In a bowl, mix the shredded chicken with BBQ sauce until well coated.
  5. Once the sweet potatoes are done, assemble the bowls by adding sweet potatoes, BBQ chicken, corn, black beans, and avocado.
  6. Top with chopped green onions and additional BBQ sauce if desired.
