- 2 cans young green jackfruit in water or brine, drained and rinsed
- 1 cup BBQ sauce
- 1 tablespoon olive oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon smoked paprika
- 1 teaspoon cumin
- Salt and pepper to taste
- Slider buns
- Coleslaw (optional, for topping)
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add chopped onion and garlic, sauté until translucent.
- Add the drained jackfruit, smoked paprika, cumin, salt, and pepper. Cook for about 5 minutes.
- Pour in the BBQ sauce and stir to combine. Simmer for 15-20 minutes, until the jackfruit is tender and can be shredded with a fork.
- Shred the jackfruit using two forks, mixing it with the sauce.
- Serve the pulled jackfruit on slider buns, topped with coleslaw if desired.
Notes
- For a spicier kick, add cayenne pepper to the jackfruit mixture.
- These sliders can be made ahead of time and reheated before serving.
