- 1 lb ground bison
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) diced tomatoes
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 2 tbsp chili powder
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
- 2 cups beef broth
- 1 tbsp olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onion, garlic, and bell pepper; sauté until softened.
- Add ground bison and cook until browned.
- Stir in chili powder, cumin, paprika, salt, and pepper.
- Add diced tomatoes, kidney beans, and beef broth; bring to a boil.
- Reduce heat and let simmer for 30-40 minutes, stirring occasionally.
- Adjust seasoning as needed and serve hot.
Notes
- For a spicier chili, add jalapeños or cayenne pepper.
- Can be served with cornbread or over rice.
- Leftovers can be stored in the refrigerator for up to 3 days.
