Description

A delicious and indulgent dessert that combines the rich flavors of chocolate and cherries in a light and fluffy Swiss roll.


Ingredients

  • 4 large eggs
  • 100g granulated sugar
  • 75g all-purpose flour
  • 25g cocoa powder
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 200ml heavy cream
  • 2 tbsp powdered sugar
  • 1 tsp vanilla extract
  • 200g cherry filling (or fresh cherries)
  • Chocolate shavings for garnish

Instructions

  1. Preheat the oven to 180°C (350°F) and line a baking tray with parchment paper.
  2. In a bowl, whisk the eggs and granulated sugar until pale and fluffy.
  3. Sift together the flour, cocoa powder, baking powder, and salt, then fold into the egg mixture.
  4. Pour the batter into the prepared baking tray and spread evenly.
  5. Bake for 10-12 minutes or until the cake springs back when touched.
  6. Once baked, turn the cake out onto a clean kitchen towel dusted with powdered sugar.
  7. Roll the cake up with the towel and let it cool completely.
  8. In a separate bowl, whip the heavy cream with powdered sugar and vanilla extract until soft peaks form.
  9. Unroll the cooled cake, spread the whipped cream evenly, and add the cherry filling.
  10. Roll the cake back up carefully, then refrigerate for at least 1 hour before serving.
  11. Garnish with chocolate shavings before slicing and serving.

Notes

  • Ensure the cake is completely cool before unrolling to prevent cracking.
  • Feel free to use store-bought cherry filling for convenience.
  • This dessert can be made a day in advance for better flavor.
