Ingredients

- Taco shells or flour tortillas
- Salt and pepper to taste
- 1/2 cup special sauce (mayo, ketchup, relish, spices)
- 1 cup shredded lettuce
- 1 cup diced tomatoes
- 1/2 cup diced onions
- 1 cup shredded cheese (cheddar, Monterey Jack, or pepper jack)
- Cooking oil for griddle
Instructions
- Preheat your Blackstone griddle over medium-high heat and lightly coat with cooking oil.
- Divide the ground beef into ¼ pound portions and roll into loose balls.
- Place the beef balls on the griddle and smash them down with a spatula, cooking for 2-3 minutes.
- Flip the patties, cooking for another 1-2 minutes; add cheese if desired.
- Warm taco shells or tortillas on the griddle until pliable and slightly crisped.
- Assemble tacos with a patty, lettuce, tomatoes, onions, and a drizzle of sauce.
- Serve immediately while warm.
