- 1 cup blue cornmeal
- 1 cup all-purpose flour
- 1/4 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1/4 cup vegetable oil
- 2 large eggs
Instructions
- Preheat the oven to 400°F (200°C) and grease a muffin tin.
- In a large bowl, mix together the blue cornmeal, flour, sugar, baking powder, and salt.
- In another bowl, whisk together the milk, vegetable oil, and eggs.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Fill the muffin tin with the batter, about 2/3 full.
- Bake for 15-20 minutes or until a toothpick inserted in the center comes out clean.
- Let cool for a few minutes before serving.
Notes
- For a sweeter muffin, add more sugar to taste.
- These muffins can be frozen for up to 3 months.
- Serve warm with butter or honey for extra flavor.
