  • 1/2 cup brown sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 1 teaspoon lemon zest
  • 1 cup blueberries (fresh or frozen)
  • 4 oz cream cheese (for the filling), room temperature
  • 1/4 cup powdered sugar
  • 1/2 teaspoon vanilla extract

Instructions

  1. Prepare the cheesecake filling by beating together 4 oz of cream cheese, 1/4 cup powdered sugar, and 1/2 teaspoon vanilla extract until smooth. Shape into balls and freeze for 30 minutes.
  2. In a large bowl, whisk together 2 1/4 cups of flour, 1/2 teaspoon baking soda, 1 teaspoon cornstarch, and 1/2 teaspoon salt. Set aside.
  3. In another bowl, cream together 1/2 cup butter, 4 oz cream cheese, 3/4 cup granulated sugar, and 1/2 cup brown sugar until fluffy. Add the egg, 2 teaspoons vanilla, and 1 teaspoon lemon zest, mixing well.
  4. Gradually incorporate the dry ingredients into the wet mixture until just combined. Gently fold in 1 cup blueberries.
  5. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  6. Using an ice cream scoop, take a scoop of cookie dough, flatten it, place a frozen cheesecake filling ball in the center, and wrap the dough around it. Seal completely and arrange on baking sheet.
  7. Bake for 11-13 minutes until the edges are golden. Cool on the sheet for a few minutes before transferring to a wire rack.

Notes

Make the cheesecake filling a day in advance for easier preparation. Consider adding white chocolate chips or swapping lemon zest for orange zest for variations.
