Blueberry Oatmeal Bars are a delicious and healthy treat made with wholesome ingredients, perfect for breakfast or a snack.


Ingredients

  • 2 cups rolled oats
  • 1 cup mashed ripe bananas (about 2 bananas)
  • 1 cup blueberries (fresh or frozen)
  • 1/2 cup almond milk
  • 1/4 cup honey or maple syrup
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a baking dish.
  2. In a large bowl, combine the rolled oats, mashed bananas, almond milk, honey or maple syrup, cinnamon, and salt.
  3. Gently fold in the blueberries.
  4. Pour the mixture into the prepared baking dish and spread it evenly.
  5. Bake for 25-30 minutes or until the edges are golden brown.
  6. Allow to cool before cutting into bars.

Notes

  • Store bars in an airtight container in the refrigerator for up to a week.
  • Feel free to substitute other fruits or nuts as desired.
