  • Total Time: 40 minutes
  • Yield: 12 egg rolls 1x
  • Diet: None

Description

Start your day with these savory breakfast egg rolls filled with sausage, eggs, cheese, and hash browns, all wrapped in a crispy shell.

Ingredients

Scale
  • 1 pound breakfast sausage
  • 6 large eggs
  • 1 cup shredded cheese (cheddar, pepper jack, mozzarella)
  • 2 cups frozen hash browns
  • 12 egg roll wrappers
  • Vegetable or canola oil for frying
  • Salt and pepper to taste

Instructions

  1. Cook the sausage: Heat skillet over medium-high heat, add sausage and cook until golden brown, about 5-7 minutes.
  2. Scramble the eggs: Whisk eggs and pour into skillet, stirring gently until fluffy, about 3-4 minutes.
  3. Mix the filling: Transfer sausage and egg mixture to a bowl, fold in cheese and hash browns, and season with salt and pepper.
  4. Assemble the egg rolls: Place 2 tablespoons of filling on an egg roll wrapper, roll tightly, and seal the edges with water.
  5. Fry the egg rolls: Heat oil in a deep pan and fry egg rolls in batches for 3-4 minutes per side until golden brown.
  6. Serve: Drain on paper towels and serve warm with your favorite dipping sauce.

Notes

Prepare the filling in advance and store in the fridge for up to 2 days. For a healthier option, consider baking or air frying instead of deep frying.
