Ingredients

  • 1 lb ground buffalo meat
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tsp onion powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup cranberry sauce
  • 1/2 cup BBQ sauce

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine ground buffalo meat, breadcrumbs, Parmesan cheese, egg, garlic, onion powder, salt, and pepper. Mix well.
  3. Form the mixture into meatballs, about 1 inch in diameter.
  4. Place the meatballs on a baking sheet lined with parchment paper.
  5. Bake for 20-25 minutes or until cooked through.
  6. In a saucepan, combine cranberry sauce and BBQ sauce over medium heat. Stir until heated through.
  7. Toss the baked meatballs in the cranberry BBQ sauce before serving.
