- 1 cup cherry tomatoes, halved
- 2 cups fresh spinach
- 1 ball of burrata cheese
- 2 cloves garlic, minced
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh basil for garnish (optional)
Instructions
- Cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
- Add the halved cherry tomatoes to the skillet and cook until they start to soften.
- Stir in the fresh spinach and cook until wilted.
- Add the cooked pasta to the skillet and toss to combine with the vegetables.
- Season with salt and pepper to taste.
- Transfer the pasta to a serving dish and top with the burrata cheese.
- Garnish with fresh basil if desired and serve immediately.
