Ingredients

  • 3 large eggs
  • 1 cup roasted butternut squash, mashed
  • 1/2 cup ricotta cheese
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 1/2 cup unsalted butter
  • 10 fresh sage leaves

Instructions

  1. In a bowl, mix the flour and eggs to form a dough. Knead until smooth.
  2. In another bowl, combine the mashed butternut squash, ricotta, Parmesan, salt, and pepper.
  3. Roll out the dough and cut into squares.
  4. Place a small amount of the filling on each square and fold to create ravioli.
  5. Boil the ravioli in salted water until they float.
  6. In a pan, melt the butter and add the sage leaves, cooking until the butter is browned.
  7. Drain the ravioli and toss them in the brown butter sage sauce.
  8. Serve warm, garnished with additional Parmesan if desired.
