Description
Decadent cheesecake bars infused with butterscotch and set atop a buttery graham cracker crust.

- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 1 cup butterscotch chips
Instructions
- Preheat the oven to 350°F (175°C) and prepare your 9×13 inch baking dish by greasing it.
- In a medium bowl, combine the graham cracker crumbs and melted butter until blended. Press firmly into the bottom of the baking dish.
- In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add the sugar, mixing well.
- Add the vanilla extract, then add the eggs one at a time, beating well after each.
- Gently fold in the butterscotch chips into the cheesecake mixture.
- Pour the cheesecake mixture over the crust and spread evenly.
- Bake for 25-30 minutes, or until the center is slightly jiggly.
- Cool in the pan, then refrigerate for at least 3 hours before cutting into squares.
Notes
These bars can be made ahead and taste even better the next day. Customize with nuts or chocolate ganache for added flavor!
