Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
- Combine the grated zucchini, brown sugar, granulated sugar, vegetable oil, eggs, and vanilla extract in a large bowl.
- Whisk together the flour, baking soda, baking powder, salt, and cinnamon in another bowl.
- Mix the dry ingredients into the wet, stirring until just combined.
- Add the butterscotch chips and fold gently.
- Bake for 25-30 minutes, or until a toothpick comes out clean.
- Cool in the pan before slicing into squares.
Notes
Squeeze out excess moisture from the grated zucchini for best texture. These bars can be made ahead and stored in an airtight container.
