Description
A rich and comforting cheesecake topped with caramelized bananas and a decadent rum glaze.

- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 2 packages (8 oz each) cream cheese, softened
- 1 cup sugar
- 2 large eggs
- 1 tsp vanilla extract
- 2 ripe bananas, sliced
- 1/2 cup brown sugar
- 1/4 cup rum
- 1/4 cup heavy cream
Instructions
- Preheat the oven to 325°F (160°C) and grease a 9-inch springform pan.
- In a mixing bowl, combine graham cracker crumbs and melted butter, then press the mixture into the bottom of the springform pan.
- In another bowl, beat the softened cream cheese and sugar until smooth. Add the eggs one at a time, then mix in the vanilla extract.
- Pour the cream cheese mixture over the crust, smoothing out the top.
- Bake for 50-60 minutes or until the center is set but still slightly jiggly. Turn off the oven and leave the door ajar for 30 minutes.
- Cool the cheesecake completely at room temperature, then refrigerate for at least four hours or overnight.
- In a skillet, melt 1 tablespoon of butter over medium heat, then add sliced bananas and brown sugar, cooking until caramelized.
- Stir in the rum and heavy cream, cooking until slightly thickened, then remove from heat.
- Pour the warm glaze over the cooled cheesecake just before serving.
Notes
You can prepare this cheesecake a day in advance for even better flavor. Avoid overmixing to prevent cracks.
