Ingredients

  • 180 grams graham cracker crumbs
  • 50 grams granulated sugar
  • 115 grams unsalted butter, melted
  • 675 grams cream cheese, softened
  • 200 grams granulated sugar
  • 3 large eggs, room temperature
  • 240 grams sour cream
  • 2 teaspoons vanilla extract
  • 3 ripe bananas, thickly sliced
  • 100 grams brown sugar
  • 45 grams butter
  • 70 grams brown sugar (for rum glaze)
  • 30 grams butter (for rum glaze)
  • 30 milliliters dark rum
  • 1 teaspoon cornstarch (optional, for thickening)

Instructions

  1. Preheat your oven to 175°C (350°F).
  2. In a bowl, combine graham cracker crumbs, 50 grams of sugar, and melted butter. Mix until it resembles wet sand.
  3. Press the mixture firmly into the base of a 23-centimeter springform pan. Bake for 8 minutes, then allow it to cool completely.
  4. Reduce oven temperature to 163°C (325°F). In your mixer, beat the cream cheese until smooth and creamy.
  5. Gradually add the 200 grams of sugar, mixing well, then add eggs one at a time, ensuring each is incorporated.
  6. Fold in the sour cream and vanilla extract, mixing just until combined.
  7. Pour the filling over the cooled crust and spread evenly. Bake for 55 to 65 minutes until edges are set but center remains slightly jiggly.
  8. Turn off the oven, crack the door ajar, and let the cheesecake cool for about an hour inside the oven.
  9. Transfer to the refrigerator and chill for a minimum of 4 hours, preferably overnight.
  10. For the caramelized bananas, melt butter in a skillet over medium heat. Stir in brown sugar and cook until dissolved, then add banana slices. Cook until golden and sticky, about 3–4 minutes. Set aside to cool slightly.
  11. In a small saucepan, melt butter and brown sugar for the rum glaze. Stir in dark rum and simmer for 2 to 3 minutes. Optionally, thicken with cornstarch mixed with water.
  12. Once cheesecake has set, arrange caramelized bananas atop and drizzle with warm rum glaze. Serve with additional glaze on the side.

Notes

For best results, prepare the cheesecake a day in advance to allow flavors to meld. Use full-fat cream cheese for optimal richness.
