Cheddar Bacon Potato Wedges

Description

Deliciously crispy potato wedges loaded with cheddar cheese and bacon, perfect for any gathering.


Ingredients

  • 3 large baking potatoes (Russet or Idaho)
  • 2 inches vegetable oil for frying
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon coarse ground black pepper
  • 1.5 cups shredded Cheddar cheese
  • 8 slices bacon, cooked and crumbled

Instructions

  1. Wash and dry the baking potatoes, then slice them in half lengthwise and cut each half into 4-6 wedges.
  2. Heat vegetable oil in a large pot to 375°F (190°C).
  3. Carefully add potato wedges in batches and fry for 4-5 minutes until golden brown, flipping halfway through.
  4. Remove wedges with a slotted spoon and let drain on paper towels, then season with kosher salt and black pepper.
  5. Preheat the oven to 400°F (200°C) and place the fried wedges on a greased baking sheet.
  6. Sprinkle generously with shredded cheddar cheese and crumbled bacon.
  7. Bake for 10-15 minutes until the cheese is melted and bubbly.
  8. Serve immediately, optionally garnished with fresh herbs or your favorite dipping sauces.

Notes

These wedges can be made ahead of time and refrigerated until ready to fry or bake. For a healthier version, consider baking at 425°F for 25-30 minutes instead of frying.
