Description

Ingredients

  • 1 lb ground beef
  • 1 cup uncooked rice
  • 2 cups beef broth
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup shredded cheddar cheese
  • 1 cup frozen mixed vegetables
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, brown the ground beef over medium heat. Drain excess fat.
  3. Add chopped onion and minced garlic to the skillet and sauté until softened.
  4. Stir in the rice, beef broth, cream of mushroom soup, and mixed vegetables. Season with salt and pepper.
  5. Transfer the mixture to a greased casserole dish and cover with aluminum foil.
  6. Bake in the preheated oven for 30 minutes.
  7. Remove the foil, sprinkle shredded cheddar cheese on top, and bake for an additional 10-15 minutes until the cheese is melted and bubbly.
