Description

Cheesy Jalapeño Cornbread Bites are a delicious and spicy snack perfect for any occasion. These bite-sized treats combine the sweetness of cornbread with the heat of jalapeños and the richness of cheese.


Ingredients

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced jalapeños (fresh or pickled)

Instructions

  1. Preheat the oven to 400°F (200°C) and grease a mini muffin tin.
  2. In a large bowl, mix together cornmeal, flour, baking powder, and salt.
  3. In another bowl, whisk together milk, vegetable oil, and eggs.
  4. Combine the wet ingredients with the dry ingredients until just mixed.
  5. Fold in the shredded cheese and diced jalapeños.
  6. Fill each muffin cup about 2/3 full with the batter.
  7. Bake for 15-20 minutes or until golden brown and a toothpick comes out clean.
  8. Let cool slightly before serving.

Notes

  • For extra heat, use more jalapeños or add some cayenne pepper.
  • These bites can be served warm or at room temperature.
