Description

A delicious cheesy keto taco casserole bursting with flavors of seasoned ground beef and topped with a bubbly layer of cheese.


Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 cup sour cream or cream cheese
  • 1 can diced tomatoes (optional)
  • 1 bell pepper, chopped (optional)
  • 1 small onion, chopped (optional)
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Heat olive oil in a skillet over medium heat and add the onion and bell pepper. Sauté until softened, about 3-5 minutes.
  3. Add the ground beef and cook until browned.
  4. Stir in the taco seasoning and diced tomatoes (if using) and let them meld together for 2-3 minutes.
  5. Mix sour cream or cream cheese with half of the shredded cheese in a separate bowl.
  6. Layer half of the beef mixture in a baking dish, then spread the cheese mixture on top, then layer the remaining beef mixture.
  7. Sprinkle the remaining cheese on top.
  8. Bake for 20-25 minutes until the cheese is bubbly and golden.
  9. Let it cool for a few minutes before serving.
