A delicious cheesy keto taco casserole bursting with flavors of seasoned ground beef and topped with a bubbly layer of cheese.
Ingredients

- 1 lb ground beef
- 1 packet taco seasoning
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 cup sour cream or cream cheese
- 1 can diced tomatoes (optional)
- 1 bell pepper, chopped (optional)
- 1 small onion, chopped (optional)
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Preheat the oven to 350°F (175°C).
- Heat olive oil in a skillet over medium heat and add the onion and bell pepper. Sauté until softened, about 3-5 minutes.
- Add the ground beef and cook until browned.
- Stir in the taco seasoning and diced tomatoes (if using) and let them meld together for 2-3 minutes.
- Mix sour cream or cream cheese with half of the shredded cheese in a separate bowl.
- Layer half of the beef mixture in a baking dish, then spread the cheese mixture on top, then layer the remaining beef mixture.
- Sprinkle the remaining cheese on top.
- Bake for 20-25 minutes until the cheese is bubbly and golden.
- Let it cool for a few minutes before serving.
