- 1 lb shrimp, peeled and deveined

- 1 bell pepper, diced
- 1 onion, diced
- 2 cups cooked rice or quinoa (optional)
Instructions
- Heat the olive oil: In a large skillet, heat two tablespoons of olive oil over medium-high heat until it shimmers.
- Season and sear the steak: Sprinkle the steak generously with salt, pepper, and garlic powder. Place it in the hot skillet. Sear for 4-5 minutes on each side, until a golden-brown crust forms. Once done, remove from the skillet and let it rest for a few minutes.
- Sauté the veggies and shrimp: In the same skillet, add the shrimp, diced bell pepper, and onion. Sauté for 3-4 minutes until the shrimp turns a vibrant pink and the vegetables soften.
- Mix and melt: Thinly slice the resting steak against the grain, then return it to the skillet, mixing well with the shrimp and veggies.
- Cheesy finish: Sprinkle the shredded cheese over the mixture and cover with a lid. Allow it to cook for about 2 minutes, or until the cheese melts into gooey perfection.
- Serve: Dish out the delightful mixture warm, over cooked rice or quinoa if desired. Garnish with fresh herbs for an extra touch of flavor.
Notes
For a spicy kick, add diced jalapeños or a pinch of red pepper flakes. Customize with seasonal vegetables to suit your taste.
