Description

Ingredients

  • 1 lb ground chicken
  • 1 cup chopped vegetables (bell peppers, carrots, onions)
  • 1/2 cup chopped peanuts
  • 1 tablespoon soy sauce
  • 1 tablespoon hoisin sauce
  • 1 teaspoon sesame oil
  • 1 head of lettuce (Bibb or romaine)
  • Salt and pepper to taste

Instructions

  1. Heat your non-stick skillet over medium heat and add the ground chicken. Sauté until browned, about 5-7 minutes.
  2. Add chopped vegetables and peanuts, and stir-fry for about 5 minutes until the vegetables soften.
  3. Pour in soy sauce, hoisin sauce, and sesame oil, and season with salt and pepper to taste.
  4. Remove from heat and let cool slightly while you prepare the lettuce.
  5. Spoon the chicken filling into each lettuce leaf, wrap it up, and enjoy!

Notes

For a spicier kick, add diced chili pepper to the filling. Store leftover filling separately from the lettuce to maintain freshness.
