- 1 lb ground chicken
- 1 cup chopped vegetables (bell peppers, carrots, onions)
- 1/2 cup chopped peanuts
- 1 tablespoon soy sauce
- 1 tablespoon hoisin sauce
- 1 teaspoon sesame oil
- 1 head of lettuce (Bibb or romaine)
- Salt and pepper to taste
Instructions
- Heat your non-stick skillet over medium heat and add the ground chicken. Sauté until browned, about 5-7 minutes.
- Add chopped vegetables and peanuts, and stir-fry for about 5 minutes until the vegetables soften.
- Pour in soy sauce, hoisin sauce, and sesame oil, and season with salt and pepper to taste.
- Remove from heat and let cool slightly while you prepare the lettuce.
- Spoon the chicken filling into each lettuce leaf, wrap it up, and enjoy!
Notes
For a spicier kick, add diced chili pepper to the filling. Store leftover filling separately from the lettuce to maintain freshness.
