Description

Chicken Mandi is a traditional Arabian dish known for its rich flavors and aromatic spices, featuring tender chicken cooked with fragrant rice.


Ingredients

  • 1 whole chicken (about 34 lbs)
  • 2 cups basmati rice
  • 4 cups water
  • 2 onions, sliced
  • 4 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 tomatoes, chopped
  • 2 tablespoons mandi spice mix
  • Salt to taste
  • 2 tablespoons vegetable oil
  • Fresh coriander for garnish

Instructions

  1. Rinse the basmati rice under cold water until the water runs clear, then soak for 30 minutes.
  2. In a large pot, heat the vegetable oil over medium heat and sauté the sliced onions until golden brown.
  3. Add the minced garlic and ginger, and cook for another minute.
  4. Stir in the chopped tomatoes and mandi spice mix, cooking until the tomatoes soften.
  5. Add the whole chicken to the pot, season with salt, and brown on all sides.
  6. Pour in the water and bring to a boil, then reduce heat and simmer for about 30 minutes until the chicken is cooked through.
  7. Remove the chicken and set aside. Strain the broth and measure out 4 cups.
  8. In the same pot, add the soaked rice and the strained broth, bringing it to a boil.
  9. Once boiling, reduce heat to low, cover, and cook for 15-20 minutes until the rice is tender and the liquid is absorbed.
  10. While the rice is cooking, grill or roast the chicken until the skin is crispy.
  11. Fluff the rice with a fork and serve with the chicken on top, garnished with fresh coriander.

Notes

  • For extra flavor, marinate the chicken in yogurt and spices for a few hours before cooking.
  • Adjust the spice level according to your preference.
  • Serve with a side of salad or yogurt for a complete meal.
