- 2 lbs chicken thighs, boneless and skinless
- 4 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1 teaspoon turmeric
- 1 teaspoon coriander
- 1 teaspoon allspice
- Salt and pepper to taste
- 3 tablespoons olive oil
- Juice of 1 lemon
- 1 cup plain yogurt
- 2 tablespoons tahini
- 2 tablespoons water
- Pita bread
- Fresh vegetables (lettuce, tomatoes, cucumbers)
Instructions
- Prepare the marinade: In a large mixing bowl, whisk together the olive oil, lemon juice, minced garlic, cumin, paprika, turmeric, coriander, allspice, salt, and pepper.
- Marinate the chicken: Add your chicken thighs to the marinade, coating them thoroughly. Cover and refrigerate for at least 1 hour, preferably overnight.
- Cook the chicken: Preheat your grill or skillet over medium-high heat. Shake off excess marinade and grill each thigh for 6-7 minutes per side until charred and fully cooked. Let the chicken rest for a few minutes before slicing.
- Prepare the garlic sauce: In a separate bowl, mix the yogurt, tahini, water, and remaining minced garlic. Adjust salt to your taste.
- Assemble and serve: Slice the grilled chicken and stuff it into warm pita bread, topped with fresh vegetables and garlic sauce.
Notes
Marinate the chicken overnight for richer flavors. This dish is excellent for meal prep and can be customized with various fillings.
