- 500g Bread Flour
- 100g Cocoa Powder
- 100g Sourdough Starter
- 350ml Water
- 10g Salt
- 150g Dark Chocolate (chopped)
- 30g Sugar
Instructions
- Combine the bread flour, cocoa powder, and sugar in a large mixing bowl.
- Create a well in the center and add the sourdough starter and warm water.
- Mix until a shaggy mass forms.
- Knead the dough by hand on a floured surface for about 10 minutes.
- Add the salt and knead it in well.
- Fold in the chopped dark chocolate carefully.
- Transfer the dough to an oiled bowl, cover with a damp cloth, and let it rise until doubled in size (4 to 6 hours).
- Shape the dough into a round loaf and place it seam-side up in a proofing basket.
- Allow it to rise again for 1 to 2 hours.
- Preheat your oven to 450°F (230°C) with the Dutch oven inside.
- Transfer the dough into the heated Dutch oven using parchment paper.
- Bake covered for 30 minutes, then remove the lid and bake for an additional 15 minutes.
- Cool the bread completely on a wire rack before slicing.
Notes
For a unique flavor, consider adding nuts or dried fruits. Allow the bread to cool completely to prevent gumminess in the center.
