Ingredients

  • 500g Bread Flour
  • 100g Cocoa Powder
  • 100g Sourdough Starter
  • 350ml Water
  • 10g Salt
  • 150g Dark Chocolate (chopped)
  • 30g Sugar

Instructions

  1. Combine the bread flour, cocoa powder, and sugar in a large mixing bowl.
  2. Create a well in the center and add the sourdough starter and warm water.
  3. Mix until a shaggy mass forms.
  4. Knead the dough by hand on a floured surface for about 10 minutes.
  5. Add the salt and knead it in well.
  6. Fold in the chopped dark chocolate carefully.
  7. Transfer the dough to an oiled bowl, cover with a damp cloth, and let it rise until doubled in size (4 to 6 hours).
  8. Shape the dough into a round loaf and place it seam-side up in a proofing basket.
  9. Allow it to rise again for 1 to 2 hours.
  10. Preheat your oven to 450°F (230°C) with the Dutch oven inside.
  11. Transfer the dough into the heated Dutch oven using parchment paper.
  12. Bake covered for 30 minutes, then remove the lid and bake for an additional 15 minutes.
  13. Cool the bread completely on a wire rack before slicing.

Notes

For a unique flavor, consider adding nuts or dried fruits. Allow the bread to cool completely to prevent gumminess in the center.
