- 1 cup quinoa
- 2 cups water
- 1/4 cup fresh cilantro, chopped
- 1/4 cup lime juice
- 1 cup bell peppers, diced (red, yellow, or green)
- 1 cup cherry tomatoes, halved
- 1/2 cup red onion, diced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 avocado, diced (optional)
Instructions
- Rinse the quinoa: Place it in a colander and run it under cold water for about 30 seconds.
- Cook the quinoa: In a medium-sized pot, combine the rinsed quinoa and 2 cups of water. Bring to a boil over medium heat, cover, and reduce to a simmer. Let cook for about 15 minutes.
- Let it rest: Remove the pot from heat and let it sit, covered, for 5 minutes.
- Mix the ingredients: In a large mixing bowl, combine the cooled quinoa with chopped cilantro, lime juice, diced bell peppers, halved cherry tomatoes, and red onion. Season with salt and pepper.
- Toss gently: Carefully combine until everything is well mixed.
- Add avocado: Fold in diced avocado just before serving.
- Serve and enjoy: Can be enjoyed chilled or at room temperature.
