Instructions

  1. Sear the salmon: Heat the olive oil in your skillet over medium-high heat. Season the salmon fillets with salt and pepper.   3. Add the tomatoes and cheese: Stir in the sun-dried tomatoes and Parmesan cheese, mixing well until the cheese melts and the sauce is creamy.
  4. Return the salmon: Place the salmon back into the skillet, spoon the sauce over the top, and cook together for 2 minutes until heated through.
  5. Garnish and serve: Sprinkle with freshly chopped parsley and serve immediately.
