Instructions
- Sear the salmon: Heat the olive oil in your skillet over medium-high heat. Season the salmon fillets with salt and pepper. Once the oil shimmers, add the fillets, skin-side down, and sear for about 4-5 minutes until golden. Turn gently and cook for another 4-5 minutes until flakes easily. Remove and set aside.
- Prepare the sauce: In the same skillet, add the minced garlic and stir for a minute until fragrant. Pour in the heavy cream and bring to a gentle simmer, thickening slightly.
- Add the tomatoes and cheese: Stir in the sun-dried tomatoes and Parmesan cheese, mixing well until the cheese melts and the sauce is creamy.
- Return the salmon: Place the salmon back into the skillet, spoon the sauce over the top, and cook together for 2 minutes until heated through.
- Garnish and serve: Sprinkle with freshly chopped parsley and serve immediately.
