- 1 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 1/2 cup unsalted butter, softened
- 1 large egg
- 1 teaspoon vanilla extract
- 1 tablespoon instant coffee granules
- 1/2 cup cream cheese, softened
- 1/4 cup powdered sugar
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, cream together the butter, granulated sugar, and brown sugar until smooth.
- Add the egg and vanilla extract, mixing well.
- In another bowl, whisk together the flour, cocoa powder, baking powder, salt, and instant coffee granules.
- Gradually add the dry ingredients to the wet mixture, stirring until combined.
- In a separate bowl, beat the cream cheese and powdered sugar until smooth.
- Drop spoonfuls of the cookie dough onto a baking sheet lined with parchment paper.
- Make a small indentation in the center of each cookie and fill it with the cream cheese mixture.
- Bake for 12-15 minutes or until the edges are set.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
- For a stronger coffee flavor, increase the amount of instant coffee granules.
- Store cookies in an airtight container for up to a week.
- These cookies can be frozen for up to three months.
