Instructions
- Heat the olive oil in a non-stick skillet over medium heat.
- Season the chicken breasts with salt and pepper and place them in the skillet. Sear for 5-7 minutes on each side.
- Transfer the chicken to a plate and cover with aluminum foil to keep warm.
- Add minced garlic to the skillet and sauté for a minute before adding the fresh vegetables.
- Sauté the vegetables for 4-5 minutes until they soften.
- Pour in the chicken broth and simmer for a couple of minutes.
- Reintroduce the chicken to the skillet, sprinkle with fresh herbs, and let it mingle for one more minute before serving.
