Creamed Spinach

  • Total Time: 30 minutes
  • Yield: 4 servings 1x
  • Diet: Vegetarian

Description

Indulge in the rich, comforting flavors of creamed spinach, enhanced with creamy white sauce, garlic, and Parmesan.

Ingredients

Scale
  • 2 pounds fresh spinach
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Nutmeg (optional)

Instructions

  1. Blanch the spinach: In a large pot, bring water to a rolling boil. Add fresh spinach and blanch for 1-2 minutes until it wilts. Drain using a colander and rinse it under cold water to stop the cooking process. Once cooled, squeeze out excess moisture and chop the spinach coarsely.
  2. Sauté garlic: In a large skillet over medium heat, pour in the olive oil. Once heated, add minced garlic, sautéing gently until it releases its fragrant aroma—this should take about 1 minute.
  3. Create the cream base: Stir in the heavy cream and bring it to a gentle simmer.
  4. Add spinach and cheese: Fold in the chopped spinach and grated Parmesan cheese, stirring until well combined.
  5. Season and warm: Sprinkle with salt, pepper, and nutmeg if desired. Stir gently, letting everything heat through for an additional 2-3 minutes.

Notes

Make-ahead tips: Prep the spinach a day in advance. You can also bake or air fry for different textures.
