- 2 cups cooked chicken, shredded
- 1/4 cup buffalo sauce
- 1/2 cup blue cheese, crumbled
- 4 cups chicken broth
- 1/2 cup celery, diced
- 1/2 cup carrots, diced
- 1/2 cup onion, diced
- 1 tbsp butter
- 1/2 cup heavy cream
- 1 tsp garlic powder
- Salt and pepper to taste
Instructions
- Heat the butter in a large pot over medium heat. Add diced onion, celery, and carrots. Cook for about five minutes until soft.
- Stir in the shredded chicken, buffalo sauce, garlic powder, salt, and pepper until well combined.
- Pour in the chicken broth and bring to a gentle simmer for 15 minutes.
- Lower the heat, then stir in the heavy cream and blue cheese. Let simmer for another five minutes.
- Adjust seasoning if necessary and serve warm.
Notes
For a vegetarian option, swap chicken for chickpeas or lentils and use vegetable broth. Make-ahead tips: Store in the fridge for up to three days, or freeze for up to three months.
