Instructions
- Heat the olive oil in a large skillet over medium heat. Let the oil shimmer before adding the chicken.
- Season the chicken breasts generously with salt and pepper, then place them in the heated skillet. Cook for about 6-7 minutes per side until golden-brown. Remove and set aside.
- Add the minced garlic and sliced mushrooms to the same skillet. Sauté for about 5 minutes until the mushrooms soften.
- Pour in the heavy cream, stirring to combine. Allow it to simmer, thickening slightly.
- Toss in the fresh spinach, stirring until it wilts down (about 2-3 minutes).
- Return the chicken to the skillet, coating it in the cream sauce. Simmer for an additional minute to meld flavors.
- Serve this dish over pasta, rice, or mashed potatoes.
