- 1 cup cream cheese, softened
- 1/2 cup powdered sugar
- 1/4 cup lemon juice
- 1 tablespoon lemon zest
- 1 teaspoon vanilla extract
- 1 cup white chocolate chips
- 1/2 cup crushed graham crackers
Instructions
- In a mixing bowl, combine the softened cream cheese, powdered sugar, lemon juice, lemon zest, and vanilla extract until smooth.
- Melt the white chocolate chips in a microwave or double boiler until smooth.
- Fold the melted chocolate into the cream cheese mixture until well combined.
- Chill the mixture in the refrigerator for about 30 minutes until firm.
- Once chilled, scoop out small portions and roll them into balls.
- Roll the truffles in crushed graham crackers to coat.
- Place the truffles on a baking sheet lined with parchment paper and refrigerate until set.
Notes
- For a stronger lemon flavor, add more lemon zest.
- Store truffles in an airtight container in the refrigerator for up to a week.
