Ingredients

  • 1 cup cream cheese, softened
  • 1/2 cup powdered sugar
  • 1/4 cup lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract
  • 1 cup white chocolate chips
  • 1/2 cup crushed graham crackers

Instructions

  1. In a mixing bowl, combine the softened cream cheese, powdered sugar, lemon juice, lemon zest, and vanilla extract until smooth.
  2. Melt the white chocolate chips in a microwave or double boiler until smooth.
  3. Fold the melted chocolate into the cream cheese mixture until well combined.
  4. Chill the mixture in the refrigerator for about 30 minutes until firm.
  5. Once chilled, scoop out small portions and roll them into balls.
  6. Roll the truffles in crushed graham crackers to coat.
  7. Place the truffles on a baking sheet lined with parchment paper and refrigerate until set.
