  • 1/2 cup cornstarch
  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons rice vinegar
  • 3 tablespoons brown sugar
  • 3 cloves garlic, minced
  • 1 tablespoon fresh grated ginger
  • 1/2 teaspoon chili flakes (optional)
  • 1 teaspoon sesame oil
  • 2 stalks green onions, sliced
  • Toasted sesame seeds (optional)

Instructions

  1. Prepare the chicken: Start by trimming the chicken thighs of any excess fat and cut them into 1.5-inch bite-sized pieces.
  2. Coat the chicken: Pat the chicken pieces dry with paper towels, then place them in a large mixing bowl. Sprinkle the cornstarch over the chicken and toss until evenly coated.
  3. Preheat the air fryer: Set your air fryer to 400°F (200°C).
  4. Air fry the chicken: Arrange the coated chicken in a single layer in the air fryer basket. Air fry for 6-7 minutes, then flip each piece and cook for an additional 6-8 minutes or until golden brown and crispy.
  5. Make the sauce: While the chicken cooks, combine the soy sauce, rice vinegar, brown sugar, minced garlic, grated ginger, chili flakes, and sesame oil in a small saucepan. Whisk and heat over medium, simmering for 3-4 minutes until the sauce thickens slightly.
  6. Coat the chicken: Once crispy, transfer the chicken to a bowl and pour the sauce over the top. Toss to coat evenly.
  7. Garnish and serve: Top with green onions and sesame seeds. Serve immediately.

Notes

For maximum crispiness, pat chicken dry before coating. If using chicken breasts, be careful not to overcook.
