- 1.5 pounds baby gold potatoes
- 3 tablespoons unsalted butter
- 3 cloves garlic, minced
- 1 tablespoon olive oil
- 1/3 cup grated parmesan cheese
- 1 tablespoon chopped fresh parsley
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
Instructions
- Boil the potatoes: Place baby potatoes in a large pot of salted water, bring to boil, and cook for about 15–20 minutes until fork-tender. Drain and let dry.
- Prepare your oven: Preheat to 425°F (220°C) and line a baking sheet with parchment paper.
- Smash the potatoes: Place boiled potatoes on the sheet and gently smash to about 1/2 inch thick.
- Melt the garlic butter: Melt unsalted butter in a small saucepan over low heat; stir in minced garlic for 1–2 minutes until fragrant.
- Brush with flavor: Brush each potato with garlic butter, drizzle with olive oil, then sprinkle with salt, black pepper, and half of the parmesan cheese.
- Roast to perfection: Roast potatoes for 20–25 minutes until golden and crispy, adding remaining parmesan in the last minutes.
- Finishing touches: Remove from oven and sprinkle with chopped fresh parsley before serving.
Notes
Use firm, unblemished baby gold potatoes for best results. You may substitute for dairy-free options if desired.
