Ingredients

Instructions

  1. Rinse the quinoa under cold water.
  2. In a pot, combine quinoa and water, bring to a boil.
  3. Reduce heat, cover, and simmer for 15 minutes or until water is absorbed.
  4. Meanwhile, heat olive oil in a pan over medium heat.
  5. Add snap peas, salt, and pepper, and sauté for 3-4 minutes until crispy.
  6. Fluff the quinoa with a fork and mix in the sautéed snap peas and fresh herbs.
  7. Top with feta cheese if desired and serve warm.
