- 1 pound beef stew meat
- 1/2 cup pearl barley
- 4 cups beef broth
- 2 potatoes, diced
- 3 carrots, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 teaspoons Worcestershire sauce
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions
- Place the beef stew meat directly into your slow cooker.
- Add in the barley, beef broth, diced potatoes, sliced carrots, and chopped onion.
- Sprinkle in the minced garlic, Worcestershire sauce, and dried thyme. Season generously with salt and pepper.
- Gently stir everything together.
- Cover the slow cooker and set it to low. Cook for 7-8 hours.
- Just before serving, taste the soup and adjust seasoning as needed.
- Serve hot, ladled into deep bowls.
Notes
For a rich finish, top with fresh parsley or a dash of hot sauce. This soup can be made up to 3 days in advance.
