- 1 cup brown sugar
- 1 cup rolled oats
Instructions
- Preheat the oven to 350°F (175°C) and grease your 9×13 inch baking pan.
- Cream the butter and sugar together for 3-4 minutes until light and fluffy.
- Add the eggs one at a time, mixing well after each, then stir in the vanilla extract and milk.
- Combine the dry ingredients in another bowl: whisk flour, baking powder, salt, and cinnamon.
- Mix the dry mixture into the wet ingredients gently until just combined.
- Layer half of the batter into the prepared baking pan.
- Prepare the crumb topping by combining brown sugar, oats, a hint of cinnamon, and melted butter.
- Sprinkle half of this mixture over the first layer of batter.
- Finish layering with the remaining batter and top with the rest of the crumb topping.
- Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
- Cool in the pan for a few minutes before slicing and serving.
Notes
For a gluten-free option, substitute all-purpose flour with a gluten-free flour blend. This cake also tastes even better a day later.
