  • 1 cup brown sugar
  • 1 cup rolled oats

Instructions

  1. Preheat the oven to 350°F (175°C) and grease your 9×13 inch baking pan.
  2. Cream the butter and sugar together for 3-4 minutes until light and fluffy.
  3. Add the eggs one at a time, mixing well after each, then stir in the vanilla extract and milk.
  4. Combine the dry ingredients in another bowl: whisk flour, baking powder, salt, and cinnamon.
  5. Mix the dry mixture into the wet ingredients gently until just combined.
  6. Layer half of the batter into the prepared baking pan.
  7. Prepare the crumb topping by combining brown sugar, oats, a hint of cinnamon, and melted butter.
  8. Sprinkle half of this mixture over the first layer of batter.
  9. Finish layering with the remaining batter and top with the rest of the crumb topping.
  10. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  11. Cool in the pan for a few minutes before slicing and serving.

Notes

For a gluten-free option, substitute all-purpose flour with a gluten-free flour blend. This cake also tastes even better a day later.
