Description
A refreshing salad made with couscous, cucumbers, mint, and chickpeas, perfect for a light meal or side dish.
Ingredients

- 1 cup couscous
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 cucumber, diced
- 1/2 cup fresh mint leaves, chopped
- 1/4 cup red onion, finely chopped
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions
- In a medium saucepan, bring 1 1/4 cups of water to a boil.
- Add the couscous, cover, and remove from heat. Let it sit for 5 minutes.
- Fluff the couscous with a fork and let it cool.
- In a large bowl, combine the chickpeas, cucumber, mint, and red onion.
- Add the cooled couscous to the bowl.
- In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
- Pour the dressing over the salad and toss to combine.
- Serve chilled or at room temperature.
Notes
- For added flavor, consider adding feta cheese.
- This salad can be made a day in advance for better flavor.
