Ingredients

  • 1 box Strawberry Cake Mix
  • 1 cup Guava Nectar or Guava Juice (for batter)
  • 3 large Eggs (room temperature)
  • 1/2 cup Coconut Oil (melted)
  • 8 oz Cream Cheese (room temperature)
  • 1/2 cup Granulated Sugar
  • 1 tsp Vanilla Extract
  • 8 oz Cool Whip (thawed)
  • 2 1/2 cups Guava Nectar or Guava Juice (for glaze)
  • 1/2 cup Granulated Sugar (for glaze)
  • 2 tbsp Cornstarch
  • 1/4 cup Water (for slurry)
  • 1 cup Sweetened Coconut Flakes (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the strawberry cake mix, guava nectar, eggs, and melted coconut oil. Beat until smooth.
  3. Grease your 9×13-inch baking pan and pour the batter in evenly. Bake for 25-30 minutes, or until a toothpick comes out clean.
  4. Let the cake cool completely on a cooling rack.
  5. In a separate bowl, whip together cream cheese and sugar until creamy. Add Cool Whip and vanilla extract, blending gently.
  6. In a saucepan, combine guava nectar, sugar, and cornstarch. Stir over medium heat until thick, then remove from heat and cool.
  7. Once the cake has cooled, spread the cream cheese frosting over the cake and drizzle the guava glaze on top.
  8. Garnish with sweetened coconut flakes.

Notes

For a unique flavor, use fresh guava puree instead of guava nectar.
