- 1 box Strawberry Cake Mix
- 1 cup Guava Nectar or Guava Juice (for batter)
- 3 large Eggs (room temperature)
- 1/2 cup Coconut Oil (melted)
- 8 oz Cream Cheese (room temperature)
- 1/2 cup Granulated Sugar
- 1 tsp Vanilla Extract
- 8 oz Cool Whip (thawed)
- 2 1/2 cups Guava Nectar or Guava Juice (for glaze)
- 1/2 cup Granulated Sugar (for glaze)
- 2 tbsp Cornstarch
- 1/4 cup Water (for slurry)
- 1 cup Sweetened Coconut Flakes (for garnish)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the strawberry cake mix, guava nectar, eggs, and melted coconut oil. Beat until smooth.
- Grease your 9×13-inch baking pan and pour the batter in evenly. Bake for 25-30 minutes, or until a toothpick comes out clean.
- Let the cake cool completely on a cooling rack.
- In a separate bowl, whip together cream cheese and sugar until creamy. Add Cool Whip and vanilla extract, blending gently.
- In a saucepan, combine guava nectar, sugar, and cornstarch. Stir over medium heat until thick, then remove from heat and cool.
- Once the cake has cooled, spread the cream cheese frosting over the cake and drizzle the guava glaze on top.
- Garnish with sweetened coconut flakes.
Notes
For a unique flavor, use fresh guava puree instead of guava nectar.
