Ingredients

  • 1 cup Cottage Cheese
  • 2 cups Fresh Spinach
  • 4 pcs Eggs
  • 1 medium Onion
  • 1 teaspoon Garlic Powder
  • 1 cup Cheddar Cheese
  • to taste Salt & Pepper

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Sauté chopped onions in a skillet with olive oil until translucent (about 5-7 minutes).
  3. Add fresh spinach and cook until wilted (about 2-3 minutes).
  4. In a large mixing bowl, whisk eggs until fluffy and fold in cottage cheese, garlic powder, salt, and pepper.
  5. Stir in the sautéed onion and spinach mixture.
  6. Fold in cheddar cheese.
  7. Pour the mixture into a greased baking dish and bake for 30-35 minutes until set and golden.
  8. Allow to cool for 10 minutes before serving.

Notes

For a vegan option, substitute eggs with flax eggs and cottage cheese with blended silken tofu or a non-dairy equivalent.
