- 1 cup Cottage Cheese
- 2 cups Fresh Spinach
- 4 pcs Eggs
- 1 medium Onion
- 1 teaspoon Garlic Powder
- 1 cup Cheddar Cheese
- to taste Salt & Pepper
Instructions
- Preheat the oven to 375°F (190°C).
- Sauté chopped onions in a skillet with olive oil until translucent (about 5-7 minutes).
- Add fresh spinach and cook until wilted (about 2-3 minutes).
- In a large mixing bowl, whisk eggs until fluffy and fold in cottage cheese, garlic powder, salt, and pepper.
- Stir in the sautéed onion and spinach mixture.
- Fold in cheddar cheese.
- Pour the mixture into a greased baking dish and bake for 30-35 minutes until set and golden.
- Allow to cool for 10 minutes before serving.
Notes
For a vegan option, substitute eggs with flax eggs and cottage cheese with blended silken tofu or a non-dairy equivalent.
