  • 1 teaspoon vanilla extract
  • 0.5 teaspoons lavender extract
  • 2 large eggs
  • 2 large egg yolks
  • 0.5 cups heavy cream
  • 2 tablespoons honey
  • 1 tablespoon dried culinary lavender buds
  • 0.25 cups honey for glaze
  • 1 tablespoon water
  • 0.5 teaspoons dried culinary lavender buds for glaze
  • 1 bunch fresh lavender sprigs for garnish
  • 1 bunch edible flowers for garnish

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a mixing bowl, combine graham cracker crumbs, melted butter, sugar, and cinnamon. Press into the bottom of a springform pan and bake for 10 minutes.
  3. In a large mixing bowl, beat cream cheese until smooth. Gradually add sugar and flour, mixing well.
  4. Add vanilla extract, lavender extract, eggs, yolks, and heavy cream. Beat until smooth.
  5. Fold in honey and dried lavender buds.
  6. Pour filling over cooled crust and bake for 60-70 minutes until the edges are set.
  7. Allow to cool in the oven for 1 hour, then refrigerate for at least 4 hours.
  8. For the glaze, heat honey, water, and dried lavender, mix well, and allow to cool.
  9. Slice the cheesecake, drizzle with glaze, and garnish with fresh lavender and edible flowers before serving.

Notes

Make it a day in advance for better flavor. Ensure all ingredients are at room temperature for a smooth filling.
