- 1 1/2 cups crushed graham crackers
- 1/3 cup melted butter
- 1 cup sugar
- 24 ounces cream cheese, softened
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 cup fresh raspberries
- 1/2 cup sour cream
- 1/4 cup raspberry jam
Instructions
- Preheat the oven to 325°F (160°C).
- In a mixing bowl, combine crushed graham crackers and melted butter. Mix until crumbly, then press into the bottom of a springform pan.
- In a separate bowl, beat the softened cream cheese until smooth. Gradually add sugar while mixing until fluffy.
- Add vanilla extract and eggs one by one, mixing thoroughly after each addition.
- Gently fold in the fresh raspberries with a rubber spatula.
- Pour the cheesecake mixture over the prepared crust and bake for 55-60 minutes until mostly set.
- Once baked, cool completely and refrigerate for at least 4 hours or overnight.
- Before serving, mix sour cream and raspberry jam, then spread over the cheesecake.
Notes
This cheesecake improves overnight as the flavors meld together. Can be made gluten-free with appropriate substitute for graham crackers.
