Description

A rich and velvety cheesecake topped with fresh raspberries and a layer of raspberry jam, this dessert is perfect for any occasion.


Ingredients

  • 1 1/2 cups crushed graham crackers
  • 1/3 cup melted butter
  • 1 cup sugar
  • 24 ounces cream cheese, softened
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup fresh raspberries
  • 1/2 cup sour cream
  • 1/4 cup raspberry jam

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a mixing bowl, combine crushed graham crackers and melted butter. Mix until crumbly, then press into the bottom of a springform pan.
  3. In a separate bowl, beat the softened cream cheese until smooth. Gradually add sugar while mixing until fluffy.
  4. Add vanilla extract and eggs one by one, mixing thoroughly after each addition.
  5. Gently fold in the fresh raspberries with a rubber spatula.
  6. Pour the cheesecake mixture over the prepared crust and bake for 55-60 minutes until mostly set.
  7. Once baked, cool completely and refrigerate for at least 4 hours or overnight.
  8. Before serving, mix sour cream and raspberry jam, then spread over the cheesecake.

Notes

This cheesecake improves overnight as the flavors meld together. Can be made gluten-free with appropriate substitute for graham crackers.
