Description

A simple and delicious banana bread recipe that features ripe bananas for natural sweetness and a crunchy streusel topping.


Ingredients

  • 3 medium ripe bananas, mashed (about 1 ½ cups)
  • 1 ½ cups all-purpose flour (190g)
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ¾ cup granulated sugar (150g)
  • ½ cup unsalted butter (115g), melted and slightly cooled
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • ½ cup all-purpose flour (65g) for streusel
  • ⅓ cup packed brown sugar (70g) for streusel
  • ½ teaspoon cinnamon for streusel
  • 3 tablespoons unsalted butter (45g), cold and cubed for streusel

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan with butter or non-stick spray.
  2. Mash the ripe bananas until they’re smooth but still a little chunky.
  3. Add the melted butter to the mashed bananas and mix together.
  4. Mix in the sugar, beaten eggs, and vanilla extract until combined.
  5. Whisk together the flour, baking soda, and salt in a separate bowl.
  6. Gradually add the dry ingredients to the wet mixture and fold gently until just combined.
  7. Prepare the streusel topping by combining flour, brown sugar, and cinnamon in a small bowl. Add cold cubed butter and mix until crumbly.
  8. Pour the batter into the prepared loaf pan and sprinkle the streusel topping over it.
  9. Bake for 60-70 minutes, checking at the 55-minute mark for doneness.
  10. Allow to cool in the pan for 10-15 minutes before transferring to a wire rack.

Store wrapped in plastic wrap for up to three days, or freeze slices for up to three months.
