Description

A simple and delicious crock pot recipe that combines tender chicken breasts with zesty salsa, hearty black beans, and melted cheese.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup salsa
  • 1 packet taco seasoning
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • Fresh cilantro for garnish
  • Salt and pepper to taste

Instructions

  1. Place the chicken breasts at the bottom of the crock pot.
  2. Pour the salsa over the chicken, ensuring each breast is well-coated.
  3. Sprinkle the taco seasoning evenly across the chicken.
  4. Add the black beans and corn on top.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  6. Use two forks to shred the chicken in the pot and mix with salsa and beans.
  7. Sprinkle the cheese on top, cover, and let melt for 5-10 minutes.
  8. Serve warm, garnished with fresh cilantro.
