Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the diced onion, minced garlic, and bell pepper; sauté for about 3 minutes until the onions become translucent.
  3. Introduce the chicken breasts, black beans, diced tomatoes, chicken broth, and spices; stir gently to combine.
  4. Bring to a boil, then reduce the heat and allow it to simmer for about 20 minutes.
  5. Using two forks, shred the chicken right in the pot.
