Instructions
- Heat olive oil in a large pot over medium heat.
- Add the diced onion, minced garlic, and bell pepper; sauté for about 3 minutes until the onions become translucent.
- Introduce the chicken breasts, black beans, diced tomatoes, chicken broth, and spices; stir gently to combine.
- Bring to a boil, then reduce the heat and allow it to simmer for about 20 minutes.
- Using two forks, shred the chicken right in the pot.
